Creamy Chicken Enchiladas


Yesterday we made Creamy Chicken Enchiladas, and they turned out to be somewhat surprisingly delicious. What made them even more yummy was that they were healthier for us then the other enchiladas we have been eating all of our lives!

Key Lime Cheesecake "Cupcakes"


As all three of us are serious key lime fans, we made these cute little Key Lime Cheesecake "Cupcakes". Normally when making key lime cheesecake you don't see cupcakes, but these proved to be the perfect healthier portions. Eating a dessert like this gets rid of the guilty feeling afterwards knowing it has such little calories and sugar content!

Parmesan Garlic Smashed Potatoes


Our Parmesan Garlic Smashed Potatoes were not your typical mashed potatoes. We used no more than a dash of salt in the entire recipe, and the flavor held strong and with plenty of garlic. They went really with the delicious chicken sandwich and made a complete and healthy lunch!

Crispy, Spicy Chicken Sandwich


Sorry it's taken so long for us to post! We've made a bunch of delicious food that will be up in a bit!

For lunch the other day we made this incredible Crispy, Spicy Chicken Sandwich. We were nervous it was going to be bland, but it was surprisingly very flavorful. It was also the perfect size to fill us up but not leave us feeling gross afterwards.

Turkey Pesto Panini


Our Turkey Pesto Paninis were super delicious and nutritious. We used whole grain bread because it has more nutrients than white bread. It also makes you feel more full and satisfied. The panini went well with our sweet smoothie, and now we are ready to make healthy choices for the rest of our day!

Also, we wanted to do a shout out to our wise, all-knowing, and compassionate faculty advisor, Mr. Keith Hartan. We hope he is reading all of our blog. We will know that he is reading our blog because he will respond to this post with an email. Look forward to hearing from you, Mr. Hartan! :)

Berry Berry Lime Smoothie


This afternoon we indulged in the tasty treat of a Berry Berry Lime Smoothie. It combines all the sweetness of cranberry, strawberry, and lime without the added sugars of any sherbet or ice cream. We made it once before, and it was so refreshing and delicious we just had to make it again!

Raspberry Cheesecake Bars


For our final dish of the night we made some scrumptious Raspberry Cheesecake Bars that were a perfect follow up for our chinese take-out night. The recipe originally called for blueberries, but since we're bigger raspberry fans we decided to switch things up a bit. It was an incredibly simple recipe that made a perfect amount of cheesecake. It got raving reviews from our guests, and we will probably make it again!

Chinese Take-Out Night!

Quicker-Than-Take-Out Orange Chicken


Tonight we made a plethora of healthy chinese food that served as a delicious substitute for the less healthy take-out alternative. The Quicker-Than-Take-Out Orange Chicken recipe was mouth-wateringly tasty, however we found the title to be a bit misleading. Although the recipe took much longer than we expected (perhaps because we doubled it), it was definitely worth making because the meal fed eight very satisfied people.

Stephen's Stir-Fried Rice


Along with our orange chicken, we made some Stephen's Stir-Fried Rice. We don't know who Stephen is, but his stir-fried rice sure is delectable ;). Because of all of the vegetables included in the recipe, we did not need to include a salad with our meal. It was really easy to make and left all of our guests feeling content.

Strawberry Spinach Salad with Buttermilk Poppy Seed Dressing


To go with our delicious Mac&Cheese we made some Strawberry Spinach Salad with Poppy Seed Dressing that was a nice sweet contrast.

We had some difficulty with the dressing when we realized we didn't have any buttermilk. Since we didn't have time to go buy some, we made our own out of heavy cream and lemon juice. The salad came out a lot better than we expected and a light compliment to our savory macaroni dish.

Stovetop Macaroni and Cheese


Sorry for the lack of blogging for the past few days! We've made a bunch of stuff but didn't have time to post it all.

We made some delicious and simple Stovetop Macaroni and Cheese that was super easy! It made a couple of small servings and is so much better for you than macaroni from a box. It was a little less salty than we were used to but it still came out great! Comment for the recipe!

BBQ Chicken Quesadilla


Yesterday's other success was this delicious BBQ Chicken Quesadilla that we made for lunch. This recipe is perfect for when you want something quick, but still delicious and filling. It has very few ingredients, and is easy to whip up in about 10 minutes. It can also be a great after-school snack!

Banana Chocolate Chip Muffins


Hi everyone!

Yesterday's efforts were a lot more successful and we made some really great banana chocolate chip muffins. They were a perfect size and just the right amount of sweetness! The recipe made about 16 muffins, and we're sad to say they've already all been eaten.

Tip: If you don't have mini chocolate chips to add to the recipe, chop up regular size ones for a greater distribution so you don't have to use as many

Corkscrew Chicken and Broccoli Alfredo


Our first attempt at cooking didn't go too badly... We made Corkscrew Chicken and Broccoli Alfredo from scratch and came up with this final product. It was a little bland but overall was a good start to our internship, and a good start to figuring out what we need to work on the most. We had the most trouble making the sauce, but in the end it came out fine.

The restaurant version of this dish averages about 1200 calories, while this dish averages about 330.
